The top note of fresh cut thyme subsides to reveal nuances of aniseed, peppermint and some faintly resinous notes (beeswax?) making for a complex bouquet. Entry is silky, medium sweet; expanding into a semi sweet yet delightfully fresh herbal / anise combo with notes of thyme and sage returning at the finish. Perfect balance. Concludes dry with subtle herb flavours demonstrating terrific persistence. 40% Alc./Vol.
