No. 1 – Batch Kettle
Produced using a discontinuous Batch Kettle originally from Canada, this method was traditionally employed to produce whisky. It creates a rich, heavy and complex rum, with tropical character and toasted caramel notes.
No. 2 – Barbet
The Barbet column still was brought to Diplomático’s La Miel distillery in 1959 and originated in France. This continuous distillation method produces rum from sugar cane molasses, which is then aged for four years in American white oak barrels previously used for bourbon and whisky.
No. 3 – Pot Still
Created in a copper pot still first used at La Miel in 1959, this traditional discontinuous distillation method was originally used in Scotland for whisky production. The rum uses sugarcane honeys and prolonged fermentation, before being filled into small American white oak barrels for ageing.
The result is a remarkable collection that demonstrates the influence of different distillation techniques on Venezuelan rum.
